Check Flavors

NOT BOXES

The Coffee Rose is an interactive, dynamic, rich content Check All That Applies (CATA) cupping form paired with a user-independent scoring engine under development by the Cafe Imports Sensory Analysis team. The cupping form is presented in the familiar format of a flavor wheel, which itself functions as the CATA array, where each of the flavors, aromas and tastes displayed are active buttons that can be used to select, combine and endorse applicable coffee descriptors.

Category

Category: Equivalent to attributes on a common cupping form; these provide context for a description but low descriptive resolution, acidity is measured separately from sweetness.

SpecificitySpecificitySpecificity

Specificity: how general or specific descriptions are; on common forms specificity is decoupled from scoring; “Specific” tier descriptions have greater descriptive power and value impact than “Qualifier” tier descriptions.

Content

Content: the specific content of descriptors and descriptor strings; on common forms content is decoupled from scoring. For example apricot has greater value in the Cafe Imports system than coffee cherry.

Intensity

Intensity: How intense a descriptor impression is, relative to a reference; common cupping forms tend to
be qualitative whereas the Rose is quantitative; higher intensity descriptors have a greater impact on coffee description and score than lower intensity descriptors.

Connotation

Connotation: An indication of if the overall contribution to the score is positive or negative. When selected, descriptors with a net positive connotation are tinted lighter, while those with a net negative connotation are shaded darker.

We’ve met before

Just like reading a flavor wheel, adding what a cupper experiences to the Coffee Rose is easy. Starting from the first inner category ring, they simply work their way out to be as specific as they like. Choose an intensity from the center of the Rose, rinse, and repeat.

A guide to scoring

The scoring engine assigns values to individual entries on the Rose. It calculates values for each descriptor string, sorts and tallies the category and sample-level scores, then processes the descriptors for a coffee’s generated descriptor pool, allowing for top-descriptor output.

Let the taste buds do the talking

As a cupper describes what they are experiencing, the Coffee Rose language builder automatically builds a description based on their choices. Freeing up the mind and hands to focus on what’s important.
